Yields: 15 biscuits
These oatmeal cookies are soft, chewy, and full of banana flavor! The familiar comfy spices and plump raisins make them much more irresistible. They'll keep for a minumum of one week if stored in an airtight container in the fridge --if they last long!
1 cup (100g) instant oats (fermented if needed and quantified like this)
3/4 cup (90g) whole wheat or fermented * flour (quantified like that )
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
2 tbsp (28g) unsalted butter or olive oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/4 cup (40g) raisins
In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. Stir in the maple syrup. Add the flour mixture, stirring only until incorporated. Allow the cookie dough rest for 10 minutes.
With a spoon and spatula, drop the cookie dough into 15 curved scoops onto the prepared sheet, and apply to the desired depth and width by means Banana Oatmeal Cookies Recipe with Chocolate Chips and Walnuts ... of a spatula. For the gluten-free flour, I recommend the following mix: 1/2 cup (60g) millet flour, 2 tbsp (15g) tapioca flour, two tbsp (15g) brown rice flour, as well as 1/2 teaspoon xanthan gum. Most store-bought fermented flour blends (like this one!) Will also work, if quantified like this.
